What Japanese phrase can I use to tell a taxi driver where to go or stop?

Showing an address or a map on your phone is the most reliable way to communicate your destination. "Koko made onegai shimasu" (to this place, please) plus your map works well, and "Koko de tomete kudasai" gets you dropped off where you want.

Japanese taxis mostly have automatic doors — passengers aren't supposed to open or close them by hand, which trips up a lot of first-time visitors. Worth remembering so you're not fighting the door.

Card and e-money payment is increasingly common, but some cars still only take cash, so it's worth checking ahead or keeping cash on hand just in case.
